And thick and fast they came at last, and more, and more, and more

pecans

We had some wild weather here yesterday, with periods of torrential downpoar (which I got caught in on the way home, whee!) and big, big winds. The last of the pecans have finally been wrenched from the trees; at times during the evening it sounded like a hailstorm with all the pecans falling on my roof. This morning I went out and collected a big bowl of them. What should I make?

Wow! I've never seen raw pecans in the shell. The local southern specialities must abound!

Coat them with spices (there's a few different ingredients you can use to get the rub to stick to the nut)...then roast them in the oven. You can make them a little sweet and/or a little spicy. Mighty good snackin' and they make a really good salad topper, too.

Either Choc.chip Cookies with lots of nuts or a nice pecan pie w/choc.chips in it. Just if you make the pie, don't go nuts with the nuts and add to many b/c it will be like cutting into a wood pie. Don't cook it too long and burn the nuts either. That spicey-coated salad topper isn't a bad idea. It's better then french fries on salad anyways.

Bourbon pecan pie.

And then toast the rest of them and eat them plain. Nothing beats a fresh pecan toasted. MMmmm.

ha! what synchronicity! just today i came across a recipe for bourbon pie - something i'd never heard of before - and though the thought of baking with corn syrup has never appealed to me before, my sugar-wheat-alcohol-chocolate-and-dairy-free mouth started to water right away. lemme know if you want me to forward the recipe to you - or i'm sure you could find something similar on epicurious.com .
